We have an expanse of Mexican paver flooring, 20 years old, and some of them are badly stained from grease and wear. I think they were never properly sealed. Is there any type of floor which can be applied over this type of floor, to alleviate the necessity (huge project) of removing the pavers?? Thanks for your input.

Sure, so long as the old tile is well attached, there is no reason you can not install a new layer of tile over top the old layer. But before you give up, I'd see about having the tile professionally cleaned. If stains are a problem, you can also dye or stain the tile — which will be unglazed and very absorbent — in order to attempt to get a consistent look.
